Diabetic-Friendly Chickpea Salad

Looking for the perfect dish with dinner tonight? Try this delicious chickpea salad as a side or snack for great blood sugar control! This well-balanced meal contains all the key components for great blood sugar control--carbohydrates paired with healthy fat (unsaturated fat), fiber and protein.

CHICKPEA SALAD

INGREDIENTS

  • 1 – 15.5 oz can garbanzo beans (chickpeas)
  • 1 large English cucumber
  • 1 – 10 oz container Cherry Tomatoes
  • 1/3 cup crumbled Feta Cheese
  • 4 TBSP Balsamic vinaigrette
  • Salt to taste
  • Ground Black Pepper to taste

DIRECTIONS

  1. Drain and rinse garbanzo in a strainer
  2. Slice English cucumber into bite size pieces
  3. Cut cherry tomatoes in half
  4. In a large mixing bowl, combine chick peas, cherry tomatoes, cucumber, feta cheese and balsamic vinaigrette
  5. Salt and pepper to taste
  6. Mix all ingredients
  7. Serve cold and ENJOY!

* Makes roughly five cups
